Toshio Shioya

Architect

Born and raised in Fukagawa, Tokyo, I have spent more than 30 years creating and renovating homes.

As a First-Class Architect, I have worked on numerous renovations and seismic upgrades of wooden houses, continually asking myself what makes a home truly comfortable.

Kinoie is one answer, given the form of a home.

The warmth of wood, the comfort of natural materials, and quiet time spent living with light and fresh air.
I hope you will experience the qualities that make a Japanese home so special.

Rie Shioya

Host & Culinary Guide

For many years, my work has involved thinking about daily life together with our clients.

A home is an essential place that supports our everyday lives.

That is why, at Kinoie, what matters to me is not merely providing a place to stay, but a home where guests can feel safe and at ease.

I am also a certified instructor of KINSARYU Edo kaiseki cuisine, and I continue to study Japanese home cooking and the food culture of Edo-period Tokyo.

Japanese cuisine is not only for special occasions.

Enjoying seasonal ingredients, sensing the changing seasons, and gathering around the table with family and friends—the richness of everyday life in Japan can be found in these simple moments.

I want guests from overseas to enjoy that richness naturally and without formality.

This wish inspired me to start Tokyo Table, where guests can experience Japanese home cooking.

Through food, I hope to share everyday life in Japan and treasure the moments when people connect with one another through smiles.

That is my wish.
